Tasting notes
Noir. 100% pinot noir. Disgorged February 7 2019, dosage 7g. Rope instead of the usual wire muselet makes for interesting uncorking. Get a friend to hold the cork if you're timid. The smell straight out of the bottle is a little wild: cheese rind, faint whiff of Marie-Courtin, and Collet's salty sweetness, also faint. All of this disappears promptly. Gorgeous sepia color like Bérèche. This has its own distinctive appeal and a memorable taste. Some oak but done well. Bright succulent acidity. Dosage feels very comfy. There is a clarity and a redolence about this champagne. Purchased at Applejack's in autumn 2020 for $75. ⭐⭐
